HEALTHY AND DELICIOUS YUMMY WINTER WARM-UP

Extra Virgin Olive Oil

500g lean beef shin

Salt and milled pepper

1 x large onion, sliced

3 cloves garlic, finely chopped

1 packet Minestrone soup mix

2 cans chopped peeled tomatoes

6 cups beef stock

1 tub basil pesto

 

Heat a glug of olive oil in a large pot, add meat,
season and brown meat all over

Remove meat and set aside

Fry onion and garlic until soft

Add vegetable mix, tomatoes, stock and meat, and season

Simmer over low heat, adding more stock or water as
needed, until beef is tender and falling off the bone

Serve hot with a dollop of pesto in each bowl

Enjoy with a low GI wholewheat bread
