No Fuss Beetroot Salad

Simply wash off some fresh beetroot and boil until soft. Allow to cool. Skin the beetroot and cut into quarters. Add Extra Virgin Olive oil, seasoning and balsamic of your choice.   1 cup of beetroot = 58 calories
